The Grignolino from the artisanal Piedmontese reality Sette represents a genuine and lively interpretation of this very interesting native grape variety from Lower Piemonte. Originating from the hills of Monferrato, where the Sette winery operates, Grignolino gets its name from the dialect term “grignolo”, which means “grape seed”, indicating the abundance of seeds, and thus tannins, that characterize the berries. Gianluca Colombo, Gregorio Gitti, and Gino Della Porta, partners who brought the small winemaking project Sette to life, focused on this grape along with two other traditional varieties from Monferrato: Barbera and Moscato Bianco.

Sette Grignolino constitutes a pure expression of the homonymous native grape variety, whose grapes come from two tiny plots planted on sandy soils on the hills surrounding Asti. The agronomic management follows the principles of organic and biodynamic agriculture, and the harvest is carried out strictly by hand. In the winery, the bunches are vinified in red through spontaneous alcoholic fermentation, associated with 15 days of maceration on the skins during which extremely delicate extraction techniques are applied. The fermentation process concludes in 7.5 hectoliter Tava amphorae, winemaking vessels in which the maturation phase of several months also takes place before the final bottling.

The color of Grignolino Sette is a light garnet red tending towards rosé. The olfactory profile is fascinating and harmonious, painted with hints of violet, berries, cherry, black pepper, and rose petals. The sip is fresh and immediate, tannic and quite winey, characterized by a dynamic finish that recalls the fragrant fruity and floral sensations perceived on the nose.
